Having a heck of a time choosing a Jag color!
Let's get straight to the point. Here's what I'm considering for a CBS-era Jag build:
There are good reasons for each of these four!
Burgundy Mist Metallic with mint; B&B: because I think the 50th Anniversary Jags are sexy as hell, but I'd prefer a matching headstock. Mint looks killer on this, but it's not CBS-accurate. I'm a little reluctant to pick this color because there are already two semi-easily obtainable Burgundy Jags on the market right now, but I DO love the color. Inspiration photo!
"Coral" with white; D&B: Coral is a weird color that usually refers to a shade of faded fiesta red. I dig the 'tomato soup' look of an orangier coral. Plus, it's one of the few shades of red I don't already own a guitar in. Inspiration photo!
Minty Yellowed Sonic Blue with white; D&B: Sonic Blue looks absolutely amazing once it yellows into this greenish tone. I'm a little hesitant to go with this, only because I think it looks even better as a Jazzmaster, and I'm not building a Jazzmaster. Inspiration photo!
Yellowed Olympic White with tort; B&B: This is the color combination of the first Jag I ever fell in love with. Saw one like this hanging in a shop in Tacoma, WA years ago: a very yellow Jag with a very red tort pickguard and a B&B fretboard. It really stuck with me. Also, this one might actually look better WITHOUT the matching head. Check the photo for reference: Inspiration photo!
One final note: all of my guitars right now are shades of orange and red. All of them! At first, it was just coincidence, but now I'm kind of actively seeking warm-toned guitars to keep this silly theme going. This is putting bias towards Coral and Yellowed Olympic White for me right now. But you know what? I still wanna know what you guys think! Whatever I choose, I'm going whole-hog on this bad boy - all top-of-the-line parts and woods and such. I've already got a slab of Brazilian rosewood for the fretboard.

Like you, I love the 50th anniversary Jag, so I would go with the Burgundy Mist.

That Coral Jaguar looks great, the only thing I'd change is to put some block inlays on it.

Get a sunburst. It will be the most badass looking guitar you own. It will sit among your red and orange guitars like their big black daddy. When you have it lined up with your other guitars It will look like Link Wray hanging out with the Beach Boys. Still keeping in line with your warm tones, but with a "darker edge".

My vote is Coral. I'm not a fan of pink or yellow on guitars, and the faded sonic starts to cross over into surf/seafoam green and feel a bit less distinct, leaving Coral as the standout.

That yellowed sonic blue/green . If not then, like BassOutkast said, yellow with black pickguard.
