If you want the true "vintage" reissue, just buy the standard model.
Okay, and which one would that be? The American Original "standard model" has the 9.5" neck and the larger frets, just like this Fiesta Red model in question. The Vintera line has the 7.25" radius, but that streaky, chocolate milk fingerboard.

Is one required to go through the Custom Shop, for $3,000+, to simply get a period-accurate (rosewood fingerboard, 7.25" radius, etc.) Jazzmaster or Jaguar?

In 2020 - assuming you can't find a used '62 AVRI or one of those recent '65 reissues - the answer appears to be "yes". To my knowledge, for the first time in many years (decades, even) Fender isn't making/selling an across-the-board period-accurate American reissue offset. I just find that a little odd, that's all.

I had one for about 10 years. CAR matching headstock from 2008.
Great guitar actually ! (except AVRI pickups which I replaced for Lollars).
Finish was very beautifyl, medium weight around 8lbs.
(sold it just recently after buying a custom shop)

I bought one of these after drinking a great bottle of wine. I absolutely love it. Sonic blue, matching headstock. Plays like a dream! How is everyone’s finish holding up? I have some nice cracks all over the neck plate area but no wear anywhere else. Also, anyone have a spec sheet for the 62’s from Dave’s?

You could probably email Dave's and ask, seeing as the run was made specifically for them. Emailing Fender with a serial # may also yield some positive results.

Thanks! Greasy Groove out of Canada - https://www.greasygroove.com/ - decent prices ($34.99 US) and excellent customer service. Out of the 10 or so pickguards I've bought over the years, one arrived broken. I let them know by email, with an attached photo of the damaged pickguard and they sent out a replacement right away.

Over time, they've built up a variety of pickguard styles and specific ones within each guitar type. For example, for Telecasters: Telecaster 8-hole, 8-hole (H), American Elite, Vintera Series, '52 Reissue 5-hole, Esquire, Nashville, '72 Reissue Thinline, '72 Reissue Custom, '72 Reissue Deluxe.

There are tons of graphic pickguards to wade through on their site - for the Ray Gun Girl, look in the sci-fi section. I've got a few of these that I've put on and off over time as the mood hits. The Ray Gun Girl is one of my faves. Funnily enough, I had an old calendar of old pulp magazine covers that I stumbled across in my storage. I looked through the calendar and found the (I guess) original cover of the Ray Gun Girl. My wife framed it for me:

Sure thing! The edges are not beveled if that's a concern. I'm not sure what the pickguard is made out but it's not like your typical Fender pickguard. Honestly, it feels a bit cheaper, but as long as the graphic looks good, it's all good to me.

They also do graphical and etched graphic neckplates, too. I've gotten some of the graphical neckplates to go with some of my pickguards.

I saw that! They've got outlet and switch covers for your home too :D They make some cool stuff. I found a blood red paisley guard that I'm tempted to get for my Tele Custom...

Mine has only seen light duty so far, but it already has a slight ding on the bottom edge below the input jack. I'm looking forward to the dings and dents - they give a guitar character.

Many of the "Made In Japan" & "Crafted In Japan" Jaguar & Jazzmaster necks come with 7.25" radius.

I believe most of the currently-available Japanese-made Fenders also have 9.5 radius (i.e. the Made In Japan "Hybrid" and "Traditional" lines).

As far as I know, the only Fenders which have a 7.25 radius and vintage frets are (some) of the Mexican-made Vintera lines.

What's the neck like on your '62?
