I want to use a couple of weird vintage pickups on a build I'm doing, but they are only a little over 3k each, so concerned they will be a bit quiet/thin
If I were to hide dummy coils in the guitar - say another 3k, and wire them in series, would that give them a bit more vim, or am I way off the mark?

The dummy coils would do nothing to increase output. If wired in series, they'd bleed off a bit of treble. They'd need to be wound as similarly to the pickups as possible (size, shape, wire gauge, number of turns) or else they'd risk increasing hum instead of decreasing it.

A dummy coil, reverse wound to your other pickups, just gives you hum cancelling. It needs to be the same facing direction (flat face not laying on its side just to fit in a cavity) and no magnetic poles/bar in it, just the wire coil. Use a toggle switch the three settings: off, clockwise, and counter-clockwise wound so you can match either of the other pickups.
If you are seeking to boost output then use a Teisco Tulip wiring diagram where they used two on/off toggles for each pickup, but when both were on they are wired in series. These coils are around 3-4kohms that together with the small guitar size I expected toy sounds, but the guitar sounds quite massive as if I am playing P90s.
Or wire in a Telecaster 4-way switch so you can choose either coil separately, both coils in parallel, or both coils in series.
This is my Teisco Tulip, first two years they had Jazzmaster style pickups. Later they moved to Strat style pickups.
