I've done a JM with just Black and white cloth wire. Works just as good. I "marked the wires" and removed the marks once they were soldered in place.
It's just that you need to pay more attention to the process.
I guess the reason of that many colours is that even non skilled personel could even wire a Jaguar....

The colors just make it easier to follow the wires. Plus, they sure look pretty!
