What Humbuckers and in what configuration? - Jag project advice needed!

Can people recommend two humbucking pickups for my project and possible wiring/switch set ups. I'll explain what I'm looking for however my original project thread is here: http://www.offsetguitars.com/forums/vie ... 35#p146135
I want a set up with two humbuckers and novel ways to use the jag switches. The two roller pots will be replaced with switches and the lower control plate will be fitted with a les-paul style toggle switch which I think will still leave two slide switched to play with on that plate alone.
I envision various coil-tapping and/or phase malarky set-up utilizing these switches (so single coil goodness can be accessed) however I know little about this and also I am seeking a fairly definite sound as a primary sound. I am looking to be able to get a really good raw non-Metal sound akin to the likes of Shellac, Fugazi, Sebadoh, Jesus Lizard, and a spot of Nirvana so ONE of the possible configurations need to nail that kind of tonality in combination with an Interfax Harmonic Percolator and Aen's GREAT DESTROYER (which is indeed great). Haven't got a gigging amp but the ideal would be a fender Blackface Bassman and cab.
Ideally I'd like qulity pick-ups thinking about bare-knuckle pickups or GFS Lipsticks for the looks, and am happy to wax-pot pickups too as this project was designed for me to have a go at various guitar tech skills.
I'd like to avoid the obvious SD JeffBeck or Dimarzio Super Distortions and get something that gets the the tones I need yet is not attached to every metal-post-punkers guitar.
